Breakfast test kitchen

First of all, on an unrelated but exciting note, I got an email this week saying that I have been accepted as a new Sweat Pink Ambassador! I am beyond excited to connect with this network of athletes and can’t wait to see how this helps me reach out to and learn from new people.

Breakfast is probably my favorite meal. People who can’t or don’t eat breakfast blow my mind because the first thing I think of when I get out of bed is what I am going to eat. But even though I love breakfast, what I actually eat for breakfast doesn’t tend to vary much. I have a small handful of favorite breakfast foods that I rarely stray from. Unlike lunch and dinner foods, which I seem to be constantly hunting down new recipes for in an attempt to deviate from “the usual”, my lack of breakfast variety doesn’t bother me. However, on occasion I will get the urge to mix up my breakfast a little bit. And it has been one of those weeks.

I tested out three breakfast recipes this week, finding them on the pages of some really great bloggers and adapting them when necessary. Here’s what I made…

Banana Mocha Breakfast Smoothie

I found this recipe on Peanut Butter Fingers and was immediately sold because it is identical to the green smoothie that I already make almost every morning post-workout… except it has chocolate and coffee in it. How could that possibly be bad!? I don’t have protein powder at the house usually so my smoothie contained:

1 frozen banana
2 handfuls of spinach
3/4 cup of skim milk
1 tablespoon of almond butter
1 tablespoon of cocoa powder
1 packet (about a teaspoon and a half) of instant coffee
1 tablespoon of ground flax seed

It wasn’t bad at all. In fact, it was delicious! And a really great way to change up the flavor of what already is one of my breakfast staples. Actually, the smoothie was so good I made it four mornings this week and every single time chugged it down so fast that I couldn’t even remember to take a picture first.

Oatmeal Breakfast Cookie

I will be honest and say that I actually made this for dessert, not breakfast. But it was originally posted on Run Eat Repeat as a breakfast food so it is taking its rightful place in this post. I followed this recipe to a tee:

1 packet of flavored oatmeal (I used bananas and cream)
1 egg white
1 tablespoon of peanut butter
Less than 1/2 teaspoon of baking powder

Mix the ingredients all together and form into a single cookie on a greased baking sheet. Bake it for 8-10 minutes at 350 degrees.

The cookie turned out perfectly and had a really great texture somewhere between a cookie and a muffin. I can see how it would be perfect for breakfast but it was cookie-like enough to be a great dessert too. I loved that it was a single serving recipe and came together really quickly.

Healthy Chocolate Banana Pancakes

Fridays are my rest days so it is a day I am more willing to stray from my normal routine since I am making one big breakfast instead of two smaller breakfasts for before and after my workout. I found this recipe for healthy pancakes on Healthy Gator Gal. Again, since I don’t keep protein powder in the house I changed this recipe up a little bit:

1 large banana
2 eggs
1 tablespoon of cocoa powder
1 tablespoon of ground flaxseed
2 handfuls of spinach
1/2 teaspoon of baking powder
1/2 teaspoon of vanilla
1/2 teaspoon of cinnamon

Combine all of the ingredients in a blender and blend well until it makes a smooth batter. Pour the batter into pancakes on a hot greased skillet and flip to cook the other side when bubbles form in the batter.

I topped mine with a tablespoon of almond butter when they were all done. These were by far the best healthy pancakes I have tried yet. The batter was a little bit thin but that could have been a result of not including protein powder, which I imagine would have soaked up some of the moisture as it cooked. The chocolate banana flavor was great though and the recipe made a very filling batch of pancakes. I definitely see myself making these again.
