No greater combination of flavors has ever been uttered: Chocolate + banana + nut butter.
I haven’t had oatmeal for breakfast in a long while. I have had a big container of oats in my cabinet waiting to be used but I am a creature of habit and recently my habits have been whole wheat english muffins with almond butter, greek yogurt, or green smoothies. These options work very well with my strange breakfast behavior. The strangeness being that, most mornings, I eat breakfast twice.
Whenever I have a morning workout I almost immediately eat a toasted english muffin with almond butter and then get ready for my sweat session. When I return I eat breakfast numero dos – usually greek yogurt with fruit or a green smoothie.
But since today was a rest day (thus, only requiring one breakfast), and since I recently found this delicious looking chocolate oatmeal recipe on Chocolate Covered Katie, I decided to experiment with oatmeal. Okay, so by experiment I actually mean that I followed the recipe exactly and then added a big spoonful of almond butter on top. Because almond butter should be added to everything humanly possible.
1/2 cup oats
3/4 cup of skim milk
1 sliced banana
1 1/2 tbsp cocoa powder
1/8 tsp salt
1/4 tsp vanilla extract
1 tbsp almond butter or whatever nut butter you prefer
Combine all of the ingredients except the nut butter in a pot and cook them over medium high heat for 5-7 minutes, stirring occasionally. Once it has thickened up to your liking, remove the pot from the stove and put the oatmeal in a serving bowl and top with the nut butter. Eat. Enjoy.
I thought this oatmeal was delicious. Be warned though, it is pretty rich; I may use slightly less cocoa powder next time and see how it turns out. Even though it is very chocolatey it doesn’t have any added sugar so it isn’t excessively sweet. Cooking the bananas with the oatmeal adds a perfect natural sweetness. The best thing about it was that it was SO filling between the oats, almond butter, and banana. I ate this at about 8 AM and didn’t even think about food again until like 12:30. This almost never happens people.
